Lemon Grass Chicken

Ingredients
2 tbsp fish sauce3 cloves garlic3 tbsp olive oil1 tbsp curry1/2 tsp salt2 tbsp splenda1.5 tsp splenda1.5 lbs of chicken breast3 tbsp water2 stalks lemon grass1 shallot thinly sliced1 red pepper finely chopped
Directions
in a bowl combine fish sauce, garlic, curry 1.5 tsp sugar 1tbsp water add chicken and coat
in small skillet mix 2 tbsp splenda with 1 tbsp water cook without stirring
Remove from heat add 2 tbsp water
Add oil, lemongrass, shallot and pepper to wok, fry until you can smell it, add chicken, caramelize cook until chicken is done
Serve over 1/2 cup rice

Serving Size: makes 4- 3oz servings with 1/2 cup rice
