1 cup uncooked quinoa1 cup chopped green bell pepper1 cup chopped onion1 cup chopped zucchini2 white mushrooms, chopped3 tbsp extra virgin olive oil
Cook the quinoa according to the instructions on the package.
While the qinoa is cooking, chop the veggies and sautee them in the olive oil.
When the quinoa is cooked, fluff and then stir in the veggies.
