1lb chicken breast1/2 cup panko Breadcrumbs2 tbsp parm cheesesalt and pepper to taste
Spray cookie sheet with no stick spray. Mix bread crumbs, parm cheese and salt and pepper into a bowl. I also added garlic powder for flavor.
Cut up chicken into 1" pieces, and shake in 1 tbsp of olive oil. Add a few pieces at a time to cover in the dry mix and place on cookie sheet.
Bake 10 min on one side, and flip, and continue baking for 10 min on other side. Or you can bake 6 min on each side and broil the last few min to make them crunchier on the outside.
