Spaghetti Sauce with Spinach & Mushrooms

Ingredients
1.5 tbsp Extra Virgin Olive Oil4 cloves garlic1 cup onion, chopped6-8 mushrooms, slice1 stalk celery, diced1 small carrot, diced28 oz can Crushed Tomatoes (3.5 cups)1 cup(ish) water (to thin out to own preference)1 bay leaf1 tsp thyme1 tsp basil1 tsp italian seasoning1 tsp salt Black pepper to taste2+ cups spinach, chopped
Directions
Heat olive oil over low-med heat. Add onions, cook for 2 mins. Add garlic, cook until tender/fragrant. Add celery, carrots, cook for 5 minutes. Add mushrooms and spices. Add tomatoes and water, stir, put lid on and let simmer for at least 30 minutes. Taste, reseason to taste, and then serve now or let simmer on low until you're ready! Add chopped up spinach about 5 to 10 minutes before serving.
