Pork Ribs with Bourbon Mustard Sauce

2 lbs of country style boneless pork ribs (nutrition is for 1.81 lbs)1 tbl vegetable oil1 medium yellow sweet onion, chopped4 garlic cloves minced1/2 cup packed brown sugar3/4 cup ketchup3/4 cup spicy brown (Dijon) mustard1/2 cup water1/4 cup Worcestershire sauce1/4 cup apple cider vinegar1/4 cup apple juice3/4 cup bourbonsalt and pepper to taste
1. Heat oil in a small sauce pan and add onions and garlic and cook for 3-5 minutes. Add brown sugar, ketchup, mustard, water, Worcestershire, vinegar, apple juice, and bourbon. Simmer the sauce until thick and reduced, stirring occasionally, about 1 hour. Season to taste with the salt and pepper and set aside. **You can make this the day before and refrigerate until ready for crockpot**
2. In a pan or on a grill, sear the ribs until lightly browned on all sides, flipping continually so they do not cook or burn. Season ribs with salt and pepper. Place in crockpot.
3. Reserve 1/2 cup of sauce. Pour remaining sauce over the ribs, turning the ribs to make sure they are fully covered.
4. Cook on low for 8-10 hours. Warm up remaining sauce and serve on top of the ribs.
