Potato, Ham & Spinach Frittata

1 Tbsp olive oil3/4 lb red potato, thinly sliced1 sm onion, thinly sliced9 large eggs1/2 tsp black pepper1 10-ounce package frozen chopped spinach, thawed & squeezed of excess liquid4 ounces of 2% milk reduced fat cheddar cheese, grated4 ounces thinly sliced low sodium deli ham-sliced in 2" pieces
1. Preheat oven 400 degress. Heat oil in large ovenproof skillet over medium heat. Add potatoes & onion and cook, tossing occasionally 12-15 min--until potatoes are tender.
2. Meanwhile, in la arge bowl, whisk together eggs & pepper. Mix in the spinach, cheese & ham.
3. Add egg mixture to skillet, stir once & put skillet in oven. Cook until eggs are set, 12-14 minutes.
