Black Bean Patty

2 C Beans, black, drained and rinsed 1/4 cup, Onions, chopped 1/4 cup Green Peppers, chopped 1 tbsp Cilantro, chopped2 tsp cumin1 tsp paprika1/2 tsp chili powder1/2 tsp salt and pepper, to taste 1/2 cup Sweet Corn 1 cup Bread crumbs, plain 1 Tbsp Flax Seed Meal (ground flax) 3 Tbsp water 1/4 cup Avocados, mashed Romaine Lettuce chopped 1/3 cup Cheddar Cheese, shredded Earth Grains Sliced Soft Hoagie Roll cut in half
In a food processor put beans, onions, bell peppers, garlic, cilantro and seasonings, blend into a paste.
In a separate bowl mix flax and water, let sit for 5 minutes.
Scoop out the bean mixture into a bowl, add in corn, bread crumbs, and flax. Mix until it comes together. If its too wet add in more crumbs. Form into patty's.
In a nonstick skillet over med high heat add bean patties. Cook about 4 minutes on each side.
Cut each hoagie roll in half. Place one patty on each half, top with cheese, avocado, lettuce, and tomato.
Serving Size: 6 sandwiches- 1/2 a hoagie roll each serving
