Amy's Black Bean Salad

Ingredients
1 15.5 oz can black beans2 large tomatoes, chopped1 cup frozen corn kernels, thawed1/2 to 1 cup chopped onion1 jalapeno pepper, chopped fine (add more if you want more "heat")2 TBSP Extra Virgin Olive Oil2 TBSP Balsamic Vinegar2 TBSP Lime Juice2 TBSP chopped fresh cilantro*salt & pepper to taste*Note - dried cilantro can be used, but it does not have the same wonderful flavor as fresh cilantro. Fresh is HIGHLY recommended.
Directions
makes about 6 1-cup servings

Drain and rinse the beans. Combine all ingredients in a 1 1/2 to 2 qt bowl. Cover and chill for at least 30 minutes to let the flavors combine.
