Fried Rice with Quinoa instead

Ingredients
1 Cup uncooked Quinoa2 Cups of water1-2 Chicken breast1 Zucchini, sliced1 Cup of Peas (Frozen)1 Carrot, sliced2 Large Eggs1 Tbl Olive oil
Directions
Prepare 1 Cup of Quinoa with two Cups of water per package directions.

Fry Chicken in Olive oil.
Once chicken is browned and cooked through, add all of the vegetables. Continue to cook vegetables for 5 to 10 minutes until done.
Fry the eggs. I usually just clear a spot in the pan. Once eggs are cooked, add the finished quinoa and stir.

Serving Size: Makes 6 servings

    I had to alter it just slightly because I didn't have all of the veggie ingredients but it turned out very good. I also added some spices (ginger, cumin, paprika) - 5/2/17
