Grandma Smiths Oatmeal / Date Cookies

Granulated Sugar, 1 cupButter, salted, 1 cupButtermilk, lowfat, 1/2 cupOld Fashioned Quaker Oatmeal- Plain 3 cups dryFlour, white, 3 cupsNutmeg, 1/2 tspsalt, 1/2 tspCinnamon, 1/2 tsp Brown Sugar, 1 cup, packedDates, 1 1/2 cups, pitted, choppedIf you reduce butter to 1/2 cup, increase buttermilk to 3/4 cup and add 1 egg, the calories per med cookie are reduced to 140 instead of 160.
Preheat oven to 400 degrees and butter two cookie sheets.
Pit and dice the dates and add to brown sugar with a little water and heat in sauce pan until sugar is dissolved. Set aside to cool. (This is the filling)
Stir baking soda into buttermilk (this is wet ingr)
Cream sugar and butter,
Sift Dry ingr together,
Add dry and wet ingr to butter mixture until just combined.
Roll out very thin and cut into cookie shapes.
Bake at 400 degrees on greased cookie sheet until golden brown. 5 min appx.
Let cool, then fill with appx 1 tsp date mixture and press together to make a sandwich.
Serving Size: 36 medium cookies
