Low Carb Cheesy "Potato" Casserole

16 Oz Cauliflower, frozen1/2 C. Broccoli, frozen 1/3 C. Onion, chopped 1/3 C. Red Bell Pepper, chopped1 lbs Bacon, cooked and crumbled 8 Oz. Cheddar Cheese 4 OZ. Cream Cheese1/3 C. Sour Cream1/3 C. Soy Milk1/4 C. Butter, unsalted1 C. Kale, chopped2 Tbsp. Dried Parsley 2 Tbsp. Garlic powder2 Tbsp. Garlic Salt 2 C. Water
Cook cauliflower and broccoli in a large saucepan with 2 cups of water until very very soft.
Preheat oven to 375 degrees.
Drain any water that has not boiled out, add in cream cheese, butter, sour cream and soy milk. Mash up with a hand mixer (or do it manually) until well mixed.
Add in all other ingredients, but set aside about 1/2 c. of cheddar cheese. Mix well
Transfer into a medium baking dish, top with remaining cheese. place in oven and bake for about 10-15 minutes until cheese is melted and golden brown. Remove from oven and let set for 5 minutes. Enjoy!
