Island Green Salad

Ingredients
1/4 cup fresh lime juice 2 tablespoons honey 1 tablespoon red wine vinegar 1 teaspoon bottled garlic , minced 1/4 cup olive oil salt and freshly ground black pepper, to taste 2 cups mangoes , cubed (may used frozen/defrosted or jarred) 4 cups romaine lettuce , chopped 1/2 seedless cucumber , cubed (approximately 1 cup)
Directions
Whisk together juice, honey, vinegar, and garlic. Add oil in a slow stream, whisking until emulsified. Season with salt and pepper.

Toss together mangoes, romaine, and cucumber with dressing, to taste.
