- Beans (Pinto, Red Kidney, Small Red, Dark Red) 4 cups- Dry Corn, 2 cups: will easily turn into 8- Beef cubes (As much as you like), could be any meat really- Water (Refill as necessary)- Garlic, 3 cloves- Coconut Milk, 2 tbsp- Butter, 1 pat- Parsley, 3 tbsp- Chicken Bouillon Powder (Maggi), 2 tsp- Salt, 1 tbsp- Scotch Bonnet Pepper, 1
If your beans are canned, rinse them and put them aside.
Cook your beef to taste, and put it aside as well.
Bring your water to a boil, add the salt and the butter and garlic.
When your water is starting to boil, add the dry corn. It may take about 2 hours for the corn to be ready, but it will take shape when ready. Add more water as it dissipates
When your corn has been boiling for about 1 1/2 hours, add the beans and the beef, the coconut milk, the other half of the pepper (I used a whole slightly fork poached pepper), the remaining parsley and the bouillon powder.
Beef: Cook beef with one clove garlic, 1 tbsp of parsley, 1 tsp of salt, and half a scotch bonnet pepper. (I blend the ingredients, add them to the beef, and boil until tender). If the beef is not yet ready when you add the beans, add it later.
Serving Size: serves 8, but I think it serves more than that, I only brought 1 cup with me and was quite full, the corn becomes big
