50g butter175g light brown sugar2 medium free-range eggs350g ripe bananas, peeled200g self-raising flour1/2 tsp salt1/2 tsp bicarbonate of soda75g almonds chopped coarsely6 almonds, to decorate
Heat oven to 180 degrees celsius and grease 1kg loaf tin.
Cream butter and sugar together until fluffy.
Mix in beaten eggs and mashed banana and beat well.
Fold in flour and bicarbonate of soda.
Stir in almonds.
Bake for 1hr-1hr+15mins, until risen and fluffy.
Serving Size: makes 8 slices
