Chicken Breast, skinlees & boneless, cookedCelery, raw, 2 cup, dicedCarrots, raw, 2 cup, dicedOnions, raw, 2 cup, dicedGarlic, 3 Tablespoons, mincedOlive Oil, 1 tbspChicken Broth, 2 cans (10.75 oz)Milk, 2%, 2 quartsFat free half and half, 1 quartBasil, fresh 3/4 cup chopped leavesCurry powder, 1/2 tsp.
Saute celery, carrots, onion, and garlic in olive oil until vegetables are limp. Add cooked, chopped chicken. Cook for 3-4 additonal minutes. Add chicken broth, milk and fat-free cream and simmer for 20 minutes until thickened. Add chopped fresh basil leaves, salt and pepper to taste, curry powder (optional) and simmer for 5 more minutes. If you prefer a thicker soup, blend 3 Tbsp. flour in 3/4 cup water and 2 Tbsp. melted butter. Stir blended flour mixture into soup and stir constantly until thickened. (This will increase the calorie count listed with this recipe).
