Apple Cranberry coffee cake - lactose free

3 cups sliced apple2 cups fresh cranberries1 cup splenda2 large eggs (whites only)2 tsp vanilla 2.5 cups flour1.5 tsp baking soda1 tsp baking powder2 tsp Nescafe French Vanilla Instant coffee2 tsp cinnamon1 tsp ground ginger0.5 tsp nutmeg1 cup So Good Fat Free soy milk0.5 cup mashed banana
1.Preheat oven to 350º F.
2.Lightly oil a 13x9x2-inch pan.
3.In a large mixing bowl, combine apples with sugar, cranberries, mashed banana, vanilla and eggs; mix well.
4. Sift together flour, soda, powder, cinnamon, ginger, nutmeg; stir into apple mixture and add Soy milk.
5.Turn batter into pan. Bake 35 to 40 minutes. Cool cake slightly before serving.
