Cranberry Almond Biscotti

Ingredients
Mix Well:Light Extra Virgin Olive Oil, 1/4 cGranulated Sugar, 3/4 c.Vanilla Extract, 3 tsp Egg, fresh, 2 largeGradually Add:Unbleached All-Purpose Flour, 1 3/4 cup Salt, 1/4 tsp.Baking Powder, 1 tsp Add:Cranberries, dried, sweetened (craisins), 1/2 cupAlmonds, 1 1/2 cup, slivered
Directions
Heat oven to 300*F
Line Cookie sheet with parchment paper
Mix dough, divide in half and form two logs (12x3inches)
Use your hands to do this and make sure your hands are wet, the dough will be sticky.
Bake 35 minutes rotate pan once at 15 minutes.
Remove from oven and let stand for 10 minutes. Reduce temp to 275*F.
Cut logs on diagonal into 3/4" slices. Lay on sides on parchment, bake for 10 minutes, turn and bake on other side an additional 10 minutes. Remove and cool.
