Burrito Buena

Ingredients
1 cup black beans, cooked and drained well(canned is fine)1/4 cup low fat cream cheese1/4 cup soft tofu1 Jalapeno pepper, cleaned and seeds removed (for more zing leave seads in), sliced1 tsp. brown sugar1 T. raw, chopped cilantro1/4 cup corn, frozen but thawed, or canned-drained well1 T. chopped raw onion5 T. salsa (your choice of heat)-divide into 1 T. for one step, and 4 T. for another4 black olives sliced1/2 cup shredded Monterey Cheese2 whole wheat or spinach, low carb, burrito size tortillas
Directions
Makes 2 servings.

Cream tofu and cream cheese in food processor or blender. Add brown sugar and jalapeno. Pulse just until jalapeno is in tiny slivers.

In small pot on stove, heat beans, corn, onion, and 1 T. salsa. Simmer 3 minutes. Add the cream/tofu mixture, and simmer 2 more minutes.

Take each *tortilla and spoon half of mixture on each. Add half of the olives, cliantro and Monterey cheese to each burrito. Fold or roll each burrito.

Burritos are ready to enjoy!

Serve each burrito with 2 T. of salsa.

*For a soft tortilla, microwave just a few seconds.
