Petite Banana Cupcakes

Ingredients
1-1/3 cups all-purpose flour1 cup white sugar1/3 cup shortening1/2 cup milk2-1/2 teaspoons baking powder3/4 teaspoon salt3/4 teaspoon vanilla extract2 eggs3 Bananas, me1 tsp. cinnamon
Directions
Preheat oven to 350 degrees F (175 degrees C). lightly mist petite baking pans with cooking spray or use paper inserts.

Mix together the flour, baking powder
and salt; set aside.

In a large bowl, cream sugar and shortening until light and fluffy. Add eggs one at a time, beating thoroughly after each. Mash up bananas ans add to mixture.

Add flour mixture alternately with milk, beating just to combine. finally, stir in vanilla. Pour batter into the prepared pans.

Bake at 350 degrees F (175 degrees C) for 20 minutes,
or until a toothpick inserted into the cake comes out clean.

Frost (or not) and enjoy.

Serving Size: makes 60 - 1 oz cupcakes or 16 regular cupcakes
