Rataouille-inspired Quiche

Ingredients
3 medium zucchini, sliced into thin rounds2 medium summer squash, sliced into thin rounds1 c spaghetti sauce (your favorite)1 Tbsp olive oil8 oz mushrooms, sliced1 large onion, diced1 Tbsp garlic, minced2 cups spinach5-6 eggsItalian herbs,to taste (fresh or dried)
Directions
Preheat oven to 400 degrees Fahrenheit. Saute mushrooms, onion, and garlic in olive oil. Cook until onion is transparent. Add spinach and cook until wilted. Remove from heat and mix in the eggs. In a casserole dish spread spaghetti sauce over the bottom. Add a layer of zucchini to the bottom to cover up the sauce. Poor in the egg mixture. Now put zucchini and summer squash slices in a colorful mixture standing upright in the egg mixture. You should see just the colored skin. I alternate yellow and green so that it looks like stripes. I then sprinkle with Italian herbs to taste. Bake for 1 hour, covered with foil.
