Vegetarian Butternut Squash Chili

Ingredients
1/4 c. flax seed, finely ground1/4 of a large red onion2 cloves of garlic, finely chopped1 can Goya black beans1 can Goya red beans1 can Progresso chick peas4 cups Vegetable broth1 pkg Boca grounds1 med. butternut squash1 med. zucchini1 cup spinach1 tbsp Olive Oil1 can diced tomatoes
Directions
saute onions and garlic in olive oil. add the beans, tomatoes, and veggie broth, season to taste. simmer. add butternut squash and zucchini. bring to a boil, and boil for 5 minutes. turn oven to low and simmer for 10 minutes. add boca grounds, spinach, and flax seeds. continue to cook on low until liquid reduces.
