thai curry chicken soup

Ingredients
Sesame Oil, 2 tbspChicken Breast, no skin, 16 ouncesOnions, raw, 1 smallPeppers, sweet, red, raw, sliced, 1 cupMushrooms, fresh, 2 cup, pieces or slicesChicken stock, 3 cup*Coconut Milk, 4 cup*Fish Sauce, 2 tbspCurry powder, 4 tbspbamboo shoots 1 can
Directions
1. put 2 tbsp of sesame oil in a pot on medium heat
2. Add chicken to the oil. cook for 3 or 4 min.
3. add onion, and peppers and cook for 2 min.
4.Add chicken stock, coconut milk, fish sauce and curry powder bring cook on medium heat.
5. add mushrooms and bamboo shoots and simmer for 20 min.

Serving Size: makes 8 1 1/2 cup serving
