Red Lentil Hummus

Ingredients
3 cups water1 cup dried red lentils, rinsed1/3 cup sun-dried tomatoes, rehydrated in hot water and drained1/4 cup tahini3 cloves garlic, minced1/2 tsp each salt and pepper1/4 tsp ground cumin3 tbsp extra-virgin olive oil1 tbsp lemon juice
Directions
In saucepan, bring water to boil. Add lentils and cook, uncovered, for 15 to 20 minutes or until tender; drain.
In food procesor, pulse together cooked lentils, sun-dried tomatoes, tahini, garlic, salt, pepper, and cumin until smooth. With food processor running, add oil and lemon juice.
Makes 2 cups
