1 can,28 oz green chilies,rinsed. or 18 whole roasted and peeled anahiem chilies.1 lb monterey Jack cheese cut into strips1/2 lb cheddar cheese5 large eggs ( beat)1 1/4 cup Milk1/2 cup floursalt and pepper to taste
Brown ground beef and set aside.. Or while browning Stuff each chili with strips of Monterey Jack cheese and Layer in well greased baking dish. I use a low fat spray. Top first layere witrh half the cheddar cheese and half ground beef. Add next layer of chilies and top with remaining beef and cheese. Beat milk and flour .. add salt and pepper to taste add in beaten eggs mix well.. and pour over chilies. Bake at 350 for 45 minutes or until knife inserted into cusstard between chilies comes out clean. Makes 8 servings --4-5in squares.
You can do this with out the ground beef or you can substitute ground turkey, egg substitues, skim milk and use low fat cheese for lower calories.
