Pan Seared Ahi Tuna Steaks with Raspberries & Peaches

4-5 oz. Ahi Tuna Steak, thawed1 medium green onion, diced1/2 cup fresh raspberries1/2 cup fresh peach slices2 Tbs. Apricot preserves2 Tbs. Balsamic Vinegar2 Tbs. Extra Virgin Olive Oil
Heat olive oil in saute' pan over medium high heat. Add peaches and green onions and saute' 1-2 minutes until peaches brown. Remove peaches and set aside. Sear each side of tuna steak 2 minutes. Add seasoning if desired. Cover and reduce heat to medium. Heat apricot preserves 30 sec. in microwave until melted. Stir in balsamic vinegar. Pour over raspberries & peaches & stir until all fruit is coated. Plate steaks on bed of rice or quinoa and cover with fruit mixture.
