Ingredients
non-aerosol cooking spray1/2 tsp cayenne pepper1/2 tsp garlic powder1/2 tsp dried dill weed1/2 tsp dried thyme1/2 tsp salt1/2 tsp black pepper4 (4-oz) catfish fillets1 (10-oz) can diced tomatoes with green chili peppers, partially drained
Directions
Preheat oven to 350 degrees. Lightly grease a medium baking dish with non-aerosol cooking spray In a medium
bowl, combine cayenne pepper, garlic powder, dill weed, thyme, salt and pepper. Arrange catfish fillets in prepared baking dish and sprinkle evenly with spice mixture; bake for 30 minutes then top fish with partially drained diced tomatoes; bake for 10 minutes longer or until fish flakes easily when tested with a fork.
