Ingredients
1 tsp olive oil2 large eggs1 tbsp butter1 tbsp fresh chives minced1 dash sea salt1 tsp pepper
Directions
place pan on low heat
add in olive oil
crack eggs into pan
add butter and stir into eggs with rubber spatula
keep stirring with rubber spatula but don't let it cook too fast remove from heat and put back as needed to keep it cooking slow.
when almost done, remove from heat and stir in the chives.
add a dash of salt and a tsp of fresh ground pepper and scoop out onto toasted sourdough bread
