Microwave Turkey Chili Cornbread Bake

Ingredients
1 Cup diced rainbow bell peppers6 Green Onions with tops, divided1 can (16 oz.) chili beans in sauce1 Cup chunky salsa2 Tbsp. Chipotle rub1 pkg. corn muffin mix8 oz. sour cream1 egg1/2 cup shredded cheddar cheese1 plum tomato
Directions
Dice bell peppers. Slice green onions into 1/4 pieces. Separate white & green sections. Reserve 1 Tbsp. onions for garnish. Place remaining tops in mixing bowl.

In microwave safe covered casserole dish combine pepper, onion bottoms and turkey; mix well. Microwave covered on high 7-9 minutes or until turkey is cooked through, breaking up chunks halfway through. Drain juices. Add beans, salsa and seasoning to meat mixture; mix well. Cover; microwave on high 5 minutes.

While meat is cooking combine muffin mix, sour cream and egg in bowl; mix well. Spoon muffin mix evenly over chili; spread to edges. Microwave covered on high 7-9 minutes or until center of cornbread springs back when lightly pressed. Remove from microwave. Sprinkle cheese over cornbread, add remaining onion tops & diced plum tomato. Cover & let sit for 5 minutes before serving.
