Sweet & Sour Pork

PROTEIN Group 1: 1/2 lb lean pork cut into strips1/2 block tofu2/3 c soy sauce4 cloves garlic1 tbsp minced ginger1/4 corn starch, dividedVEGGIES Group 2a: 1 med onion, diced1 carrot, cut on bias1 stalk celery, dicedGroup 2b:1 c diced pineapple1 c red & green pepperSAUCE Group 3: 3/4 c ketchup1/4 c red wine vinegar1-2 big blobs of honey (1.5 oz)1 tbsp sesame oil
1) Ahead of time, mix Protein Group 1 together using only 1/8 c of cornstarch (half total amount). Set aside for a few hours or overnight.
2) When ready to cook, drain off marinade. Dredge in reserved cornstarch and stir fry in a bit of oil until golden brown ~ 10 min. Set aside.
3) In the same wok, add a bit more oil and group 2a. Sweat until onion goes limp ~3-4 min. Add 2b and return pork/tofu. Cook additional 1 min.
4) Add Sauce Group 3. Cook until pork & veggies are tender ~4-5 min.
Serve over rice.
