Green Tortilla Soup

Ingredients
Green Tortilla Soup1 qt of chicken broth6-8 tomatillos with husks removed and rinsed well2 bunches of cilantro with ends cut off1 jalapeño with seeds removed1 whole med-large yellow onion½ head garlicJuice of lime2 4oz cans of diced green chilies1 lb of cooked chicken shredded, diced, or cut1 can corn2 15oz cans of black beans1 green bell pepper diced1 TBS ground cumin (or more if you)1 tsp salt1 tsp ground pepperGround red pepper to desired heat
Directions
Makes approximately 10 1.5 cups.

Warm up stock on stove in med-large pot. Rinse all veggies. Put tomatillos, cilantro, and jalapeño in blender. Blend well. Add 1 of the cans of diced chilies. Add garlic and onion to blender mix. Blend well for a few minutes. Add Lime Juice and make sure it is well blended. Add to chicken stock in pot. Bring to boil. Add diced green pepper, other can of diced chilies, corn, beans, and chicken. Add seasonings (cumin, salt, and peppers). Let simmer stirring occasionally for 30 minutes.

I top it with baked tortilla chips, low fat cheese, and low fat sour cream. Avocado's are also SO yummy with this.
