Ingredients
9 oz chicken breast with skin2 chicken legs1.5 Tablespoons olive oil1/4 teaspoon Kosher salt1/4 teaspoon coarse black pepper4 red potatoes, quartered2 Tablespoons lemon juice1 teaspoon lemon zest1/4 cup finely chopped parsley1/4 cup grated parmesan cheese
Directions
Preheat oven to 425. Combine 1/2 T olive oil, Kosher salt and coarse black pepper. Rub on chicken and place skin side up in baking dish.

Scrub and quarter potatoes. Toss with 1/2 T olive oil and put around chicken in dish. Sprinkle with salt and pepper if desired.

Drizzle 1 T lemon joice over chicken and potatoes. Bake at 425 for 15 minutes. Reduce heat to 375 and bake for an hour or until potatoes are tender and chicken is fully cooked. (Toss potatoes half-way through baking time.)

In a separate bowl, combine 1/2 T olive oil, 1 T lemon juice, lemon zest, parsley, and parmesan cheese. Crumble over chicken and potatoes and serve.
