CHOP ONION, GARLIC, CELERY. PUT ALL INGREDIENTS IN A VERY LARG POT AND BRING TO A BOIL. LOWER TO SIMMER AND COOK FOR SEVERAL HOURS, STIRRING EVERY 15 MINUTES.
