1 onion chopped3 cloves of garlic minced1 bulb of fennel chopped5 stalks of celery chopped10 baby carrots chopped5 small yukon potatoes cut into pieces, skin on1 packaged cubed tofu1 28 oz can diced tomatoes4 cups of water2 bay leaves1/2 tsp. saffronsalt and pepper to tastezest and juice of half a lime
Directions
Add all ingredients to slow cooker and cook for 6-8 hours.
