Curried Pumkin Ginger Soup

Ingredients
3 15 oz cans solid pack pumpkin2 cups chopped raw onion2 cups chopped raw carrot1 stalk celery2.5 Tbs olive oil1 Tbs Mild Curry Powder1 inch section grated fresh ginger1 cube chicken boullion1 cup coconut cream1 tsp minced garlic
Directions
Saute curry powder, garlic, and ginger briefly in olive oil, then saute onions, celery, and carrots until tender. Add pumpkin, 2 cans worth of water, and the boullion cube, and let simmer 20 minutes. Blend and serve.
