Crockpot Steel Cut Oats with Agave, cranberries, raisins and walnuts

  • Number of Servings: 4
Ingredients
1 cup steel cut oats5 cups water (or less for extra thick oats)1/2 tsp. salt (do not skip the salt)2 TBS Agave or Agave maple syrup1/4 cup cranberries1/4 cup raisins------------------------1/4 cup vanilla almond milk (or soy)1 tbs crushed walnuts
Directions
To cook the steel cut oats:
Combine steel cut oats, water, agave syrup, cranberries, raisins, and salt in crockpot. (I sprayed the crock with non-stick spray to prevent sticking.) Cook on low, stirring every hour or so. After 3 hours start checking to see if the oats are as done as you'd like. I cooked my oats for 3 hours and 15 minutes, but a larger batch or an older model crockpot will take longer.

Steel Cut Oats with Agave, cranberries, raisins and walnuts - 1 serving:
1 cup cooked steel cut oats, still hot from crockpot or heated in microwave for a few minutes
Put hot oats in a bowl and top with 1 tbs chopped walnuts (could also use almonds or pecans)

(If you're reheating the steel cut oats in the microwave, add a 1/4 cup of vanilla almond milk before you microwave them.)
