Classic Chocolate Truffle Souffle Cake

Ingredients
2 1/2 Tbsp butter4 oz bittersweet or semisweet chocolate1 Tbsp orange, raspberry or coffee liqueur1 large egg1 large yolk3 Tbsp sugar
Directions
Preheat oven to 350F
grease 3 small ramekins
Melt chocolate and butter together, stir in liqueur and let mixture cool to lukewarm.
Beat egg, yolk and sugar at high speed until tripled in volume, 4 - 5 minutes.
Fold 1/4 of egg mixture into chocolate mixture to lighten it, then fold all of the chocolate mixture into the remaining egg mixture.
Spoon batter into prepared ramekins.
Bake for 20 minutes.

Serve with sweetened whipped cream with a little liqueur added for flavour. (Not included in calorie count.)

    I used 1 egg and 2 egg whites. Lemon juice instead of liqueur
    (what I had in the house), and 4 ozs of cocoa powder. It was delish anyway. I will definited make this again. Next time I will follow the recipe as is. - 8/26/11
