Brownie Batter Baked Oatmeal (single-serving, vegan)

1/3 cup rolled oats1/4 cup canned plain pumpkin3 tbsp water1 tbsp nonfat creamer, such as SoDelicious Vanilla1 tbsp Hershey's Special Dark Cocoa powder (unsweetened)1/4 tsp vanilla extract2 packets stevia sweetleafdash of saltoptional: 1/2 tbsp sliced almonds for crunchy topping (not included in nutrition info, but only adds about 25 cal and 2g healthy fat)
Preheat toaster oven to 375 degrees F.
Spray a mini-loaf pan (or ramekin) with nonstick spray.
In a bowl, combine all ingredients except for optional topping, and mix well with a spoon. Transfer to oiled pan.
Bake for 20 minutes, then set toaster oven to broil for an additional 3 minutes.
