Cinnamon Coffee Cake

30ml margarine175ml brown sugar5ml cinnamon__________________425 ml flour15ml baking powder2ml salt__________________1 egg250 ml milk2ml vanilla
1. Preheat oven to 375 degrees fahrenheit.
2. Grease 20cm pan.
3. Melt margarine, stir in brown sugar and cinnamon. Set aside.
4. Mix dry ingredients.
5. Cut in shortening with a pastry blender. Make a well in the center.
6. Slightly beat egg, milk, and vanilla together.
7. Add liquids to the well in dry ingredients. Mix until moist, there should be some small lumps in there.
8. Spread in pan. Sprinkle topping (brown sugar mixture) over the whole thing.
9. Bake 30-35 minutes, or until toothpick comes out clean.
Serving Size: Makes 18 3by3 cm pieces
