Spanish Omelette

Ingredients
10 large eggs1 tablespoon of chopped Green Bell Peppers1 tablespoon of chopped sweet peppers, red1 large raw potato1 large onion, chopped1 cup diced hamdash of salt to tastedash of pepper to taste
Directions
First peel and slice the potato, then fry, not too crispy
Once done set aside
Break eggs into bowl and whisk, then add salt to taste and whisk in.
Chop onion, bell and sweet pepper, and ham, throw in deep frying pan, cook for about 2 minutes on medium heat, stirring often, lower heat.
Then pour in 1/2 the egg mixture, throw in potatoes and stir, then pour the rest of the eggs.
cover and allow to cook in low heat checking until almost done, if possible use lid to turn omlette over and cook on other side without breaking. cover and let it finish cooking.

Serving Size: makes 8 servings which we cut like a pizza slices
