Fresh Salsa

12 medium to large tomatoes (about 12 cups)2 bell peppers (1 1/2 cups)2 large onions (2 cups)2 cloves garlic1 lime, juiced (1/4 cup)1/2 bunch cilantro leaves (1/2 cup)2 jalapeno peppers1/4 cup cider vinegarSalt to taste (I taste and then add)8 oz tomato sauce
Core tomatoes. Chop into small, even pieces. Finely chop onions and peppers. Finely mince garlic and cilantro leaves. Mix all vegetables together in large bowl and add lime juice and vinegar. Stir in tomato sauce and salt to taste. Chill for at least 2 hours for flavors to meld.
I usually divide the salsa in half and make 1/2 of it HOT. For HOT salsa, add 1/2 to 1 cup additional chopped hot pepper. Jalapeno, serrano, cayenne and tabasco peppers will add a good flavor and heat!
