Vegetarian African Peanut Stew

1 medium sweet potato, peeled and cubed2-3 cloves of garlic1 large onion, chopped1 green pepper, chopped2 jalepeno peppers, seeded and diced32oz vegetable broth1 can black beans (washed and drained)1 can diced tomatoes1 t ground cumin1 t coriander1/4 t cayenne pepper (optional)1/3 cup Peanut Butter
Place a large with olive oil over medium heat until warm.
Add sweet potato, onion, bell pepper, garlic, and jalapeño; sauté 5 minutes.
Stir in broth and next 5 ingredients (broth through cayenne); bring to a boil. Reduce heat; simmer 20 minutes.
Add peanut butter, stirring with a whisk; cook 2 minutes.
