Easy Fried Rice

2 Cups - Minut Rice2 Cup - Chicken Broth5 Oz - Frozen Mixed Vegetables2 Eggs beaten1/4 Cup - Soy Sauce1 TB - Canola Oil
1. Boil Chicken Broth. Add Rice. Remove from heat and cover for 5 minutes. Fluff with a fork. Set aside.
2. Heat oil in Wok or Non-stick skillet over med-high heat. Add vegetables, rice, and soy sauce cook until vegetables are heated through approximately 5-10 minutes.
3. Add eggs; cook and stir until egg is completely set. Season with salt and pepper.
This is very versatile and can be a main dish just by adding some meat or more vegetables. Brown rice works well in this dish also.
