Apple/banana fritters

4 cups pared and quartered apples or bananas sliced thinly (may substitute berries)2 cups unbleached sifted white flour1 1/3 cups 1% milk4 brown eggs2 tbsp sugar1/2 tsp salt olive or canola oil
Prepare fruit and set aside. Combine dry ingredients and make a well in center. Add milk and egg yolks (set aside egg whites) and whip batter gently with wire whisk until smooth. Beat egg whites until frothy and stiff, then fold egg whites and fruit gently into batter until mixed well. Brush griddle with oil and heat until drop of water sizzles on contact with griddle. Use ladle or measuring cup to pour batter to make cakes of desired size and cook to golden brown on each side. Apply light coating of butter and powdered sugar or topping of choice and enjoy!
