Asian Chicken Pita Pockets

Ingredients
*1 6 cup package finely shredded cabbage (or shred your own)*1 16 oz. bag Broccoli Cole Slaw mix (I use Mann's)*2 boneless, skinless chicken breasts, grilled and diced into bite sized pieces*1 cup shredded carrot*1 cup of Sesame Soy Ginger Dressing * 10 Whole-Wheat Pita Pockets
Directions
Makes about 10 1 cup servings

In a large bowl, combine cabbage, slaw, carrots, chicken, and dressing. Set aside

Slice each pita in half, then fill each half with about 1/2 cup of the salad mixture. two filled pita halves = one serving.

Notes:

I love taking these to work...I portion out the chicken mix into little ziplock baggies, then slice my pitas in half and seal them back up. In the morning, all I have to do is throw a pita, a bag of the mix, some pretzels and mandarin orange slices into my lunchbox, and I have a super-easy, guilt free lunch that all of my coworkers talk about. It couldn't be simpler!
