Steak Chili and beans

Ingredients
1/2 lb. of round steak, or other lean beef2/3 cup each of red beans, white beans, pinto beans, black eyed beans, and black beans2 Tbs of olive oil1 medium white onion6-7 cloves of garlic3 Tbs red wine vinegar3 cans of tomato sauce3 cups of tomato juice1 can yellow corn, drained wellChili PowderGround CuminCorn starch
Directions
Makes about 12 1 cup servings

Soak the beans overnight in the refrigerator to properly hydrate. Drain thoroughly prior to adding to chili.

Roughly chop the onion
Peel and crush the garlic
Add the oil (may use 1Tbs butter instead) to a saute pan and add onion and garlic. Sweat (cook until mostly transparent but not browned or glazed). Add the beef, and season all with chili powder and cumin. Saute until meat is browned on all sides, stirring frequently.

In a large crock pot, add half the tomato sauce and juice, add beans, corn and beef, onion and garlic mix. Cover with remaining sauce and juice. Add red wine vinegar. Stir to mix ingredients together in crock pot. Cover and set to high for 6 hours.
