Curried Corn Bisque

2 tsps canola oil1 cup chopped onion2 tbsp curry powder1 tsp hot sauce1/4 tsp salt1/2 tsp. black pepper12 oz package frozen corn1 can creamstyle corn4 cups water1 cup lite cocnut milk(polar)
In med. saucepan add oil and saute onions until tender.
Add curry powder, hot sauce, salt and pepper and stir to coat onions. Add water and corn, increase heat to high and brin to a boil. Boil 5 minutes.
Remove from heat and puree soup in a blender or food processor. Return to a clean pot and add coconut milk and reheat.
Serving Size: Makes 8 1-cup servings.
