1 48 oz. Bottle Low Sodium V8 Vegetable Juice1 14.5 oz. can Low Sodium Petit Diced Tomatoes (with Garlic & Onion if preferred)1/2 box (about 8 oz.) Whole Grain Piccolini Pasta (choose your favorite shape!)1 Bay leaf - whole1 Tbsp Sugar Oregano, Basil, Parsley, Salt & PepperGrated parmesan
1) Pour V8 juice and tomatoes into large soup pot and bring to a boil.
2) Add pasta and boil for about 2 minutes stirring continuously to prevent sticking. Drop temperature to simmer and add herbs and season to taste.
3) Allow to simmer about 10 minutes or until pasta is tender stirring often.
4) Serve with grated parmesan.
Serving Size: Makes about 7 one-cup servings.
