Ingredients
3 cups diced raw potatoes2 tbsp canola oil1 tube breakfast sausage, thawed1 cup diced onions1 cup sliced fresh mushrooms8 oz cheddar cheese shredded
Directions
Fry potato cubes in large skillet over medium high heat for 15 minutes. Add sausage, onions and mushrooms. Continue cooking covered, stirring occasionally for 20 to 30 minutes or until sausage is completely browned and potatoes are thoroughly cooked. Pour eggs over all and stir to cook. Stir in cheddar cheese, cover, turn off heat, and allow to melt.
