Chicken Quinoa Jambalya

Ingredients
! cup organic Quinoa2 cups water1 tbsp olive oil1 cup chopped onion2 cloves garlic2 boneless skinless chicken thighs cubed2 vine ripe tomatoes diced1 poblano pepper diced1 tsp salt1 tsp pepper
Directions
Cook quinoa on stove top or in rice cooker first. While quinoa cooks dice and chop all veggies. go ahead and cube chicken while the quinoa cooks.

Start with sauteing onion and garlic in olive oil, then add the chicken.

Cook chicken thoroughly and add tomatoes and poblano pepper, let everything simmer for 10 minutes then add salt and pepper to taste. Add in the cooked quinoa , reduced the heat and cook for another 5 minutes then serve,.
