Ingredients
1/2 Butterflied Chicken Breast1/4 C. Shredded Cheddar Cheese2 Small Shallots, sliced 1/4" thick1/2 Green bell pepper, cut into 3/8" strips1/4 tsp. Salt1/4 tsp. Pepper
Directions
Sprinkle chicken with salt and pepper. Saute shallots and peppers in a dash of oil. Grill chicken breast in cast iron skillet on stove. Top with sauteed peppers and onions, top with shredded cheese, and broil for 5 minutes or until cheese is melted and bubbly, and beginning to brown slightly.
